So, after a solid two weeks twelve days of cleansing finally we got to have treats again! I could hardly wait for the last day of the cleanse to be over. Well, I couldn’t wait for it to be over, so I made this Banana Bread that night.

I made it gluten-free and it was actually pretty good. Aside from the fact that I was doing about ten things at the time and forgot to add baking powder {big oops!}, my first attempts at gluten-free baking {aside from these delicious 6-ingreident peanut butter cookies} wasn’t too bad. I adapted the recipe from Smitten Kitchen all I did was substitute flour for brown rice flour. However, because I had read that sometimes rice flour can make things too dry, I added an extra banana but a little less butter.
Here’s the recipe I used:
4 ripe bananas, mashed
1/4 cup melted salted butter
3/4 light brown sugar
1 egg, beaten
1 teaspoon vanilla
1 teaspoon baking soda (.. ya don’t for get this one)
Pinch of salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
Pinch of ground cloves
Just less than 1 1/2 cup of rice flour 1cup of milk chocolate chips
Preheat the oven to 350°F. With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, vanilla and, then the spices. Sprinkle the baking soda and salt over the mixture and mix in. Fold in the flour and add the chocolate chips last, mix. Pour mixture into a buttered 4×8 inch loaf pan. Bake for 50 minutes to one hour, or until a tester comes out clean. Cool on a rack. Remove from pan and slice to serve.
I also managed to take mine out too early but it seemed like it was burning {probably because once I realized I forgot the baking soda, I added it in ten minutes into baking}, so likely cook it closer to one hour.
Luckily it still tasted great!
We all have those little things that make us who we are. Love ‘em or hate ‘em, those quirks are what you’re stuck with {for as long as you want choose to be stuck with them}. Many of mine are almost contradicting in a way, but hey, I’ve learned to live with them!
-I love dogs but I hate dog hair. When I puppy sit, I swiffer or vacuum the floor and carpet at least once twice a day and the lint roller is always out and in full force… but I am still a sucker for when they want to cuddle or curl up on your lap {provided they are a little pup!}.
-I am on my phone very often; keeping in touch with people through one of the various technological methods that we can. But my favourite times are when my phone dies, I don’t have a charger, and it’s just me all alone, with no way for anyone to reach me.
-I try to be am a runner. However, being able to say I am a runner is a thousand times better than actually making my way outside for that run!
-On first impressions, I don’t judge anyone. I don’t feel that people are really themselves until the insecure walls people put up upon first meetings are taken down. That being said, I also try to keep judgments to a minimal {a work in progress!}.
-My refusal to eat fruits and veggies that are non-organic or any meat that isn’t local and organic {almost all meats that I eat are from a butcher shop. My go-to: BigLou’s} completely contradicts with my willingness to eat Reese’s Peanut Butter Cups and Sour Keys.
-I cook and bake a lot. Fresh cookies, cupcakes, muffins, loafs, healthy dinners of all sorts… but if this was a balanced diet, I would just have cheese, bacon, and crackers for dinner every night… but tonight, its time for sushi!

This year I do have some of the traditional self discipline + deprivation resolutions in an attempt to better myself in 2012:
- Run my first half marathon.
- Get straight A’s my last term! {+1 class} at school.
- Decide on and commit to my next move: writing the lsat? grad school?
- Floss at least 3 times a week {I hate people who floss everyday… just out of pure jealousy. Such a simple task yet I cannot manage it!}.
- Not buy anything unless I really need it. {That means not just justifying it really well but actually!!! be in need of said object}.
- Save, save, save!!! {That means spending less than I earn and sticking to a budget!}.
- Plan (I’m waiting anxiously for you to grad Lauren!) our trip to hike Machu Picchu!
However, my main resolution on top of those is to continue to seek balance in all aspects of life, be more present, enjoy the journey the best I can, and…
simplify, simplify, simplify!
