Real Life… What?

Online Job Hunting.

Perfecting Resumes.

Personalizing Cover Letters.

Repeat.

Why did I want to grow up so fast again? Mom, take me back as a 5 year old :) !  Or I could win the infamous tax on the poor, the Lottery! Easy peasy.

Yet, I don’t know if I’d actually be able to claim the money with the though of what a mess it could make.  Donate most of it, give some to family and friends {but where does the line get drawn?}. Go on a big trip with all of your closet friends {wait, since when did you have 500 close friends?}. Everyone who gets left out doesn’t like you anymore, everyone expects you to pay for everything, always.  When does it end? When you’re worse off than before? Hmm… ya I’d have an anxiety attack if I won. Then when I got over than shock, maybe buy a puppy, give some to close family and those friends I know who truly need it, put some away for a few years and, give the rest to a sustainable cause.

I’d like to think I’d be that good with it but most of me knows I’d go take off on a big fat adventure…{before I bought the dog, obviously} !

Red Carpet: and the award goes to…

In my opinion Mila Jovovich took home the best dressed award last night at the Oscars.  What’s that?  You can’t get an Oscar for best dressed?!?!?

Well we should fix that shouldn’t we.

Angie took home the “most leg flashes in a night” award.  OK, we get it, you’re gorgeous but deathly skinny and are in need of a lesson in eating.  Come hangout with me for a week and I’ll help you out. Your treat- of course.

We took home the award for “most crab cakes eaten in a single sitting.”

Impressed?

I would be if I were you.

But, did anyone actually watch more than two of the movies nominated…? Hmm, me neither. Regardless, I hope you enjoyed the glitz and glam of the show.

Have a happy glam-filled Monday in celebration of… Crabcakes!!

Dear Sara

Your passing has been a reminder that life is short; that every moment is something to be cherished and seized to its fullest- which is something you did well.  Your infectious smile, kind heart and, positive energy are things that no one could get enough of- both when we were littles and now, as grown adults.  You have left a lasting impression on many and will be missed dearly.

May your love continue to live on in our hearts.

Dinner for one.
It’s hard to get motivated when D’s out of town to cook for just me but I had a hankering for mashed potatoes. And yes, that’s a hole for my gravy.

Gluten Free Banana Bread.

So, after a solid two weeks twelve days of cleansing finally we got to have treats again! I could hardly wait for the last day of the cleanse to be over.  Well, I couldn’t wait for it to be over, so I made this Banana Bread that night.

I made it gluten-free and it was actually pretty good.  Aside from the fact that I was doing about ten things at the time and forgot to add baking powder {big oops!}, my first attempts at gluten-free baking {aside from these delicious 6-ingreident peanut butter cookies} wasn’t too bad.  I adapted the recipe from Smitten Kitchen all I did was substitute flour for brown rice flour.  However, because I had read that sometimes rice flour can make things too dry, I added an extra banana but a little less butter.

Here’s the recipe I used:

4 ripe bananas, mashed
1/4 cup melted salted butter
3/4 light brown sugar
1 egg, beaten
1 teaspoon vanilla
1 teaspoon baking soda (.. ya don’t for get this one)
Pinch of salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
Pinch of ground cloves
Just less than 1 1/2 cup of rice flour                                                                                                       1cup of milk chocolate chips

Preheat the oven to 350°F. With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, vanilla and, then the spices. Sprinkle the baking soda and salt over the mixture and mix in. Fold in the flour and add the chocolate chips last, mix. Pour mixture into a buttered 4×8 inch loaf pan. Bake for 50 minutes to one hour, or until a tester comes out clean. Cool on a rack. Remove from pan and slice to serve.

I also managed to take mine out too early but it seemed like it was burning {probably because once I realized I forgot the baking soda, I added it in ten minutes into baking}, so likely cook it closer to one hour.

Luckily it still tasted great!
